How to Make the Best Short Rib Ragu!

Here is a recipe for a super easy and tasty red wine shirt rib ragu pasta. Perfect to make for Valentine's Day!

Ingredients

1 can marzano tomatoes 28 ounce

1 bay leaf

Beef stock 3-4 cups

1.5 cups of red wine

2 tbsp tomato paste

1 diced carrot

1 diced onion

2.5 pounds bone in short rib

Optional: left over Parmesan rind

Instructions

1. Salt and pepper your short ribs and brown on all sides on high heat. Remove once all sides have a crisp. You can reserve the beef fat or dab some out.

2. Add your tomato paste and caramel use for 1 min. Add chopped veggies, stir fry for 1-2 min. Then add your wine to scrape the brown bits off the pan.

3. Add canned tomato, add short ribs, add beef stock. Add more or less to make sure short ribs are submerged. Add bay leaf.

4. Add cheese rind and cover and cook on low for 2.5 hours. Make sure to check for burning in the half way mark.

5. Remove short ribs. Remove the bones and shred the meat. You can use forks but I’m lazy and use the blender. Return to the sauce.

6. Serve over cooked pasta of your choice. I like to sauté it with the cooked pasta before serving. Enjoy!
